Elana’s Pantry gluten-free cookies
Wow. Just a few minutes ago, I got a box of some of the best gluten-free chocolate-chip cookies I’ve ever tasted, courtesy of Elana’s Pantry, a very cool and generous website by eco-mamma Elana of Boulder. I say generous because she includes tons of gluten-free, dairy-free, and naturally sweetened recipes on her website, all for free. Her particular secret for gluten-free baking: high-protein blanched almond flour. (Not the same as almond meal, although I love Bob’s Red Mill almond meal/flour. Elana finds it too coarse for her recipes; I’m wondering if it would work to grind it more finely?)
